Description
A selection of the best soils from the Finca San Rafael plots used to make Contino Reserva, is about going one step further in acidity, concentration and maturity. The Tempranillo mainly comes from stony soil near the Ebro River, which allows for slower maturation due to the humidity.
Harvested by hand and in 15 kg boxes. Grapes are not only selected in the field, but also in the winery, with a sorting table. After destemming, they ferment with native yeast in concrete tanks at 26-28ºC. Once this is finished, post-fermentation maceration takes place. Malolactic fermentation takes place in these same tanks. This is followed by racking into French oak barrels (a mix of new and used ones) where they will remain for 24 months.
