Nose
On the nose, its complexity and originality are immediately perceived: notes of ripe fruit such as pink grapefruit, white peach and quince intertwine with delicate tropical nuances, such as passion fruit and roasted pineapple. All this accompanied by a suggestive background of fermentative and autolytic aromas, reminiscent of brioche, toasted bread and a touch of honey and beeswax, the result of fermentation with wild yeasts and aging on lees in French oak barrels. Subtle touches of sweet spices, such as vanilla and nutmeg, complete the set.
Palate
In the mouth it is broad and enveloping, with a creamy texture that fills the palate without losing freshness thanks to a vibrant and well-integrated acidity. The balance between volume, smoothness and liveliness stands out, which translates into a long, elegant and slightly saline finish, leaving a pleasant memory of ripe fruit and spicy notes.
