D.O.P. Sierra de Salamanca
D.O.P. Sierra de Salamanca lies in the south of the province of Salamanca, in Castilla y León. It is a mountain appellation known for its old vineyards and for Rufete, its most emblematic variety.
One of the most interesting aspects of this appellation is its landscape. The vineyards sit on steep, rugged mountain terrain, with many plots traditionally cultivated on terraces and slopes above the Alagón river and its tributaries.
The soils are especially important for understanding its wines. Unlike much of Castilla y León, they are predominantly acidic, with slate and granite formations and mainly sandy-loam textures. The climate is defined as humid temperate Mediterranean.
Rufete reds are probably its most representative expression: delicate, fresh, aromatic wines with elegant tannins. Reds are also made from Tempranillo and Garnacha.
The whites can show aromas of white fruit, flowers and herbal notes, with good acidity and a marked mineral character. Rufete Serrano Blanco is gaining particular importance for its ability to produce fresh, structured whites with ageing potential.
In short: it is a small appellation closely tied to its land, standing out for its old vineyards, steep slopes, granite and slate soils and, above all, Rufete. It is one of the areas of Castilla y León with the most singular viticultural profile.
