Parellada is a variety of Spanish white grape, grown mainly in Catalonia and closely associated with the production of Cava. Together with Macabeo and Xarel·lo, it is one of the three traditional white varieties used in Catalan sparkling wine.

It adapts particularly well to elevated, relatively cool areas, where it retains its acidity better and develops a delicate aromatic profile. It has traditionally been grown in inland areas of Catalonia, especially in the provinces of Barcelona and Tarragona.

Parellada wines are usually light, fresh and elegant, with moderate aromatic intensity. Typical aromas include white flowers, apple, pear, citrus fruits and light herbal notes. Their good acidity and subtle character make them particularly suitable for adding freshness and finesse to sparkling wines.

In traditional Cava blends, Parellada usually provides a more delicate, floral and fresh profile, while Macabeo contributes fruit and softness and Xarel·lo usually provides greater structure and body.
