Description

José Pariente Fermentado en Barrica 2024 is the most ambitious and complex expression of Bodegas José Pariente, the family winery located in La Seca (Valladolid), in the heart of the D.O. Rueda. A viticultural project that has turned Verdejo into a nationally and internationally renowned white wine, with a modern and precise approach that fully respects the variety and terroir.

Made with 100% Verdejo grapes from the winery's own old vineyards located in the most characteristic area of Rueda, with an average age of over 30 years. The vines, trained in a traditional bush, grow on soils with a characteristic quartzite cobble platform, poor in organic matter and with some limestone outcrops at the highest elevations. The yield is very low, approximately 4,000 kg per hectare. The continental climate with Atlantic influence forces the vines to seek water resources deep in the subsoil, concentrating the aromas and varietal expression to the maximum.

The harvest is entirely manual in 20 kg boxes, allowing for an initial selection of the grapes in the field. The winemaking is carried out with extraordinary precision: fermentation takes place entirely in new and one-year-old French oak barrels of 500 and 228 liters, sourced from various cooperages, with indigenous yeasts. Subsequently, the wine undergoes batonnage for 6 months, in permanent contact with its lees. Finally, it is transferred to stainless steel tanks where it remains for another 5 months before bottling. Total: 10-12 months of aging.

Of a bright golden color. On the nose, complex and intense: ripe exotic fruit, peach, pear, citrus, smoky touches, sweet spices, subtle vanilla, and a mineral background characteristic of Rueda's cobble soils. On the palate, it is voluminous, unctuous, and very elegant, with a creamy texture that reflects the work on the lees, perfectly balanced between the richness of the fruit and the complexity provided by the barrel. Long finish, with the characteristic and pleasant bitter touch of Verdejo.

Serving temperature: 10-12°C. Ideal for seafood, baked fish, fish rice dishes, pasta with creamy sauces, Iberian ham, foie gras, and white meats.
