Description

After the harvest, we press and select the highest quality yolk must and subject it to a long and very controlled racking process to obtain clean must.

Subsequently, this clean must is fermented in stainless steel tanks, at a low temperature below 13ºC, thus obtaining great aromatic intensity and maintaining its varietal character.
