D.O.P. Pago Campo de la Guardia
D.O.P. Pago Campo de la Guardia is a Vino de Pago located in La Guardia (Toledo), in Castilla-La Mancha. It covers reds and whites made exclusively from grapes from its own vineyard.
The reds of Pago Campo de la Guardia usually show good structure, concentration and a marked presence of fruit, accompanied by nuances from their ageing in wood.
According to the product specification, the reds may show aromas of red or black fruit, flowers, spices, balsamic and mineral notes, together with hints of barrel ageing. On the palate, the aim is structured, fresh, complex wines with a long finish.
In the single-varietal wines, the profile changes with the grape: Syrah can bring black fruit, chocolate and balsamic notes; Cabernet Sauvignon, spices and undergrowth; and Merlot, violets and red fruit.
Chardonnay is also produced. Part of the must may ferment and rest on its lees in new oak barrels. The result seeks to combine fruit and freshness with notes of tropical fruit, nuts, toast, pastry, butter and light smoky hints.
Ageing
The red wines of the pago are subject to specific ageing rules. The red may spend a minimum of 5 months in 225-litre oak barrels, while the Tinto Selección Especial and the single-varietal reds included in the specification require a minimum of 9 months in barrel, plus a subsequent period in bottle.
